Healthy Stuffed French Toast!


CLEAN STUFFED FRENCH TOAST

Hey guys! So I know you can get really sick of having the same breakfast all the time... so why not mix it up?! This is a french toast recipe that has been adapted to be healthier and cleaner! Enjoy :) 

INGREDIENTS:
  • 2 slices of any bread (I prefer to use rye)
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1 packet natvia 
  • splash of almond milk
  • 2 egg whites 
  • 1 tbsp PB2 or almond butter 
  • 1/2 small banana
  • 2 wedges of laughing cow cheese 
DIRECTIONS:
  1.  Heat pan to a medium heat. 
  2. In a small bowl, add the egg whites, almond milk, cinnamon, vanilla extract and natvia.
  3. Dip bread into mixture and place on a pan that has been sprayed with non-stick cooking spray. (I like to use coconut oil spray) Allow to cook for a couple minutes, then flip over.
  4. Repeat step 3 with the other slice of bread. 
  5. Once you have cooked your French Toast, spread the layer of PB2 or almond butter on one slice of bread. Then spread the laughing cow cheese on the other slice of bread. 
  6. Slice the banana on top of one side, and then sandwich the two pieces together.
  7. Place back on the pan for a couple minutes so the French toast can get nice and crisp and heated all the way through.
  8. Cut in half, top with syrup, shredded coconut, and additional cinnamon or whatever toppings you like.
  9. EAT AND ENJOY!
